Opening Lecture by Dr. Ingolf Gruen

Dr. Ingolf Gruen is an associate professor in the department of Food Science at the University of Missouri's College of Agriculture, Food and Natural Resources. He holds a Ph.D. from Virginia Tech University, and his research focuses on analytical chemistry with applications in food composition, flavor chemistry and the influence of food ingredients on quality attributes of foods.

Dr. Gruen opened the Food Revolutions exhibition on March 6, 2012, with a lecture entitled "Food Revolutions: How Science Changed the Way We Eat." Slides from the presentation can be downloaded from the MOSpace repository.
